The coffee truck has a tank capacity of 100 gallons and releases approximately 15 gallons into <br /> the septic system daily.The primary source of wastewater comes from cleaning a small amount <br /> of food prep items.All coffee grounds are discarded into the trash preventing the solids from <br /> entering the wastewater treatment system. <br /> On an average day,the coffee truck produces—7 gallons of coffee sold in individual,single-use <br /> cups.To minimize the impact on the wastewater system, Mountain Grounds Coffee Co. has <br /> implemented a Standard Operating Procedure(SOP)that strictly regulates the amount of excess <br /> coffee,syrups,and milk products entering the system: <br /> • Milk and syrup are measured based on cup size to minimize waste. <br /> • Accidental spills are cleaned using paper towels and disposed of in the trash. <br /> • Coffee grinds are collected in a knock box and then discarded in the trash once <br /> cooled. 5t <br /> • Empty syrup bottles are disposed of in the trash. ��.� titi <br /> • Expired milk products are left in the container and then trashed. <br /> • Food preparation utensils are wiped off before being washed to eliminate excess,,,% <br /> byproducts of the coffee preparation from entering the wastewater treatment <br /> system. <br /> I believe that by following the existing SOP and adding public-use restrooms we can significantly <br /> reduce the strength of the wastewater.Additionally,if the coffee truck releases its tank into the <br /> main septic system daily,the waste will co-mingle with the other five food trucks and have a greater <br /> retention time in the tanks.This should result in residential-strength wastewater,as outlined in OAR <br /> 340-071-0100(123). <br /> Tyler Fuhriman,WINS <br /> 8p <br /> �L.z:r <br /> a <br /> 4( �11 �• \jam'. <br /> !
