- 2 - <br /> <br />OAR/ORS No. <br /> <br />32-022/023 <br /> <br />Plumbing must comply with the State Plumbing Code. Floor sinks <br />must be readily accessible for cleaning. If ice cream is to be <br />scooped, a dipper well is required. Salad bar, ice machine, <br />steam tables, dipper wells and vegetable sinks must be equipped <br />with a "safe waste" or indirect air gap discharge drain. <br /> <br />32-024 <br /> <br />Each refrigerated case must have a red fluid spirit stem ther=~meter. <br /> <br />32-028 <br /> <br />A sneeze guard is required to protect all foods or beverages to <br />which the public is allowed service access. Sneeze guard opening <br />is to be between 6 - 10 inches in height from top of service <br />counter to bottom edge of guard. Protection muse be provided <br />around entire perimeter of the bar. <br /> <br />All storage must b~ at least 8" off the floor, on a wheeled base <br />or on a completely sealed base. <br /> <br />32-032 <br /> <br />A separate area is required for m~ps, brooms and cleaning sepplies <br />storage. Recon~mend installation of a mop sink.
