( BRUCEPAC I!, <br /> �.* A PASSION FOR PROTEIN® <br /> February 1, 2021 <br /> RE: Stainless Steel Drains ', <br /> To Whom It May Concern, <br /> BrucePac is a meat processing company that produces fully cooked RTE meat proteins. <br /> We are required to adhere to all USDA regulations, include in the control of Listeria in <br /> our plant. The drains we use must to be cleanable to prevent the growth of Listeria. <br /> For the reasons listed below, we are requesting a deviation from use of the plastic type <br /> drains that will create food safety issues and potential public health threat if we are not <br /> able to control Listeria monocytogenes. <br /> • The plastic drains contain several harborage areas for bacteria to grow. <br /> • Plastic drains are not cleanable due to the many seams and transition points. <br /> • The stainless steel drains are constructed so all joints are purge welded to be <br /> smooth on the inside which allows for clean surfaces, no harborage areas. This <br /> is the same design we use within the plant. <br /> • Primer pipe on discharge of trap for sanitary purposes. <br /> • The stainless steel drains are needed in the lunchroom area because it is a <br /> transition area to the plant.
