My understanding in speaking with the owner is that the food service to accompany the wine is intended to be very small <br /> and simple snack-size elements(a cracker with cheese,or a cracker or small slice of bread with a piece of meat,etc.). Kim clarified to <br /> me that the larger flows are associated with full meals,either catered or prepared on site. <br /> I spoke with the owner this morning and have a better understanding of the situation and offer the following alternative analysis for a <br /> potential peak day sizing: <br /> 450 gpd-150 tasters(at 3 gpd) <br /> 600 gpd-40 people at rare(a few times per year)events(at 15 gpd for meals prepared and served on site) <br /> 120 gpd-8 employees(at 15 gpd) <br /> 1,070 gpd maximum projected daily flow(potential peak) <br /> 1,350 gpd design flow(to match the existing drainfield capacity) <br /> According to the archived records,the existing system serving the house consists of 450 LF of standard serial distribution trenches. I <br /> would propose utilizing the existing system and replacement area as the base for an expanded system that would include advanced <br /> treatment. A conceptual outline of the proposed improvements is as follows: <br /> • Add a 1,000 gallon"kitchen"septic tank(like what we did at the church on Wiltse Road)and a 1,000 gallon septic tank at the <br /> new tasting room/winery building <br /> • Commingle the effluent from these tanks and the existing septic tank in a 1,500 gallon surge dosing tank with a screened pump <br /> vault and duplex pumps,controlled with timed dosing(small doses on a 24-hour schedule) <br /> • Install a 1,500 gallon per day(MicroFAST 1.5)advanced treatment system that would have a gravity discharge to the existing <br /> drainfield <br /> With you conceptual approval of this approach,we will develop a scope to submit to the owner so we can move as quickly as reasonably <br /> possible to prepare detailed plans for submittal to your office for formal review and approval.
